Healthy Banana Muffins

If your anything like me, fitting a good breakfast in around a busy lifestyle is hard. If it’s breakfast-on-the-go you are looking for, then try this healthy banana muffin recipe by Weight Watchers. They are so delicious, you wouldn’t believe they are healthy. They are also super easy to make. They’re 180 calories per muffin, so pair one with a portion of your favourite fruit and a cup of tea for a good brekkie.


 Makes 12 muffins

♥ 250g Plain Flour
♥ 1 Teaspoon Baking Powder
♥ 1 Teaspoon Bicarbonate of Soda
♥ Pinch of Salt
♥ 1 Egg, Beaten
♥ 80g Soft Brown Sugar
♥ 3 Ripened Bananas, Peeled and Mashed
♥ 4 Tablespoons Corn Oil


♥ Preheat the oven to 190°

♥ Sift together flour, baking powder, bicarbonate of soda and salt

♥ In another bowl, beat together the egg, 5 tablespoons of water, sugar and bananas

♥ Add the corn oil to the wet ingredients and stir well

♥ Combine the two sets of ingredients and mix well – the consistency should be lumpy

♥ Place 12 paper cases in a muffin tin

♥ Spoon the mixture into the cases and bake for 20-25 minutes until golden, firm and springy

♥ Cool on a rack – Can be enjoyed warm or cold
