Starting the day off in a healthy way is great for setting you up to eat healthy for the rest of the day. I never used to eat breakfast until I started university, but now I do eat it I find I get bored of eating the same thing everyday. I like to change it up a bit everyday. I’ll have 0% fat Greek yoghurt and honey one day, porridge with fruit the next, and sometimes just cereal. But quite often I find myself craving savoury food for breakfast.
This recipe is inspired by a breakfast I had at Frankie & Benny’s, but I put a healthy twist on it. It’s a change from ordinary scrambled eggs, but isn’t quite an omelette.
♥ 2 Slices of Weight Watchers bread
♥ 2 Medium eggs
♥ Half a red pepper, chopped
(You can also add any other veg you like, I find Mushrooms, tomatoes, spring onion and red onion are tasty in this recipe)
♥ A teaspoon of Flora Cuisine OR a few sprays of Frylight
♥ A dash of milk
♥ A pinch of pepper
♥ Start by putting the Flora Cuisine or Frylight in a frying pan over a medium heat.
♥ Throw in the chopped red pepper and any other veg you are using, making sure to move it with a wooden spoon so that it doesn’t burn.
♥ Crack open both eggs and place in a measuring jug.
♥ Add the dash of milk and pinch of pepper to the eggs.
♥ Put your bread in the toaster at this point, so that it’s still hot when the eggs are ready.
♥ Using a whisk, whisk together the egg mixture and pour into the frying pan.
♥ Use the wooden spoon to move the egg and pepper in the frying pan, creating a scrambled egg consistency.
♥ When the egg mixture starts to harden on the bottom, turn sections over to make sure the other side is cooked thoroughly as well.
♥ Spread some low fat butter or spread on your toast and top with the veggie scrambler.
♥ You can either eat it like that or top it off with your favourite sauce, such as HP Brown Sauce or Ketchup.
Paired perfectly with your morning coffee or juice, this is a great way to start your day!
