Autumn Apple Pie Bites

My Mum’s apple pie is one of my favourite autumnal desserts. Just the taste of it reminds me of cosy autumn evenings spent with family. I thought I would share this delicious apple pie bites recipe that I found on Pinterest – Quick and simple, perfect for an autumnal afternoon snack.

♥  60g Light Brown Sugar
♥  1/2 tsp Cinnamon
♥  1/2 tsp Nutmeg
♥  1/4 tsp All Spice
♥  3 tbsp Melted Butter
♥  1 Sheet of Ready Rolled Puff Pastry
♥  50g Chopped Pecans
♥  1 Granny Smith Apple – cored and cut into 8 Pieces

♥  Preheat your oven to 190°c and line a large baking tray with baking paper.
♥  Combine the brown sugar, cinnamon, nutmeg, and all spice in a bowl and set to the side.
♥  Melt the butter for a few seconds in the microwave. Toss the apples in the melted butter and set to the side.
♥  Lay out the puff pastry sheet on a large chopping board and cut into 8 triangles. Lay the triangles out evenly on the baking tray.
♥  Spread roughly 2 teaspoons of the spice mix on each triangle and top with a small handful of the chopped pecan nuts.
♥  Place an apple slice on the wide end of each triangle and wrap the puff pastry around it.
♥  Top with the left over melted butter and a sprinkling of the spice mix before baking for 15 minutes in the oven until golden brown.
♥  Enjoy with a scoop of vanilla ice cream or a dollop of custard – delicious!
